Hand picked in the wild forests of the Yukon, wild Agaricus augustus and arvensis species grow in the thick moss in mixed forests across Canada. Often as large as a dinner plate these highly aromatic mushrooms have a strong nutty almond and anise scent that carries over to cooking.
